BAYTE, is a modern European neighbourhood restaurant with an emphasis on local sourcing and quality produce in the seaside town of St Leonards-on-Sea. The seasonal menu blends influences from across the globe, with particular reference to Italian recipes, such as hand-rolled pastas.
The meat at BAYTE is free-range and reared on biodynamic, organic Haye Farm in Devon. Vegetables are also sourced from organic suppliers, most of them from English and Japanese vegetable growers Namayasai, and Goat Grid Farm, both in nearby Lewes.

    Join us at BAYTE on 21st July as our chef Josh Dickinson will be taking you on a culinary journey with a Japanese-inspired set menu, utilising the best produce from his organic farm Goat Grid. Josh worked in Japan in a Kaiseki restaurant called Ryugin which holds three Michelin stars. This tasting menu is his interpretation of Kaiseki Cuisine. At the heart of Kaiseki, dining is the Japanese principle of shun, or taking ingredients at the peak of their freshness. Dishes are presented simply, without artifice. Kaiseki is the word for multi-course Japanese dining, originating from Kyoto. There will be 6 courses for £55 with a supplementary course on top. Sake and Japanese cocktails pairings also available.

    Recommended to eat here by our Airbnb host. Did not disappoint! 1. Dog friendly 2. Great menu, limited choices but still very difficult to choose from! 3. Loved the local provenance of menu items 4. Staff friendly and efficient- even though we heard that they were short staffed due to Glastonbury festival 5. Would highly recommend

    I didn’t know what to choose on the menu as it all looked so delicious . I picked the trout which was perfectly cooked and the desserts were phenomenal. They were served on large frozen dishes which added to the pleasure

    Menu was disappointingly brief, no daily ‘specials’ which might have helped? Interesting but ultimately rather unexciting. Cocktails were trying to be different but perhaps didn’t quite hit the mark given a hefty £13 price! From the wine list the ‘organic’ Verdejo was decidedly underwhelming at £9 a glass. The staff, however, were great, genuinely knowledgeable about the dishes and really helpful - offering to upsize a first course when nothing on the mains appealed. Love the style and ambience of the place and would go back, but maybe check the menu online first…..
