Located between Union Station and Chinatown in D.C.’s East End, Bar Spero is the latest restaurant from Chef Johnny Spero of Michelin-starred Reverie in Georgetown. Inspired by the spirited, fast-paced energy of the Basque nightlife and dining scene, both local D.C. residents and epicurious travelers can expect Bar Spero to be a central hub for creative cuisine and subtly masterful cocktails in a lively, eye-catching, and eclectic space.

The menu is a seafood-forward spread focused on Mid-Atlantic fare. Highlighting specialties such as imported Spanish turbot and Autumn Olive pork from Shenandoah Valley, the menu is shaped by the careful sourcing of world-class ingredients. In turn, the cocktail program takes cues from the kitchen, with a focus on high-quality spirits that elevate classic recipes. Guests can also choose from a tightly curated list of wine and spirits, as well as regional beers on tap.

Service was warm and attentive. Food is seafood-centric, very creative, and quite delicious. American food but incorporating Asian and Mediterranean influences.

A hit and miss experience. More misses than hits... The prix fixe format does not suit this restaurant. We started with the steak tartar and grilled oysters. The tartar was very good and the portion size was enormous. The grilled oysters should have been called creamed oysters as the oysters were lost in the cream sauce that it was slathered in. The serving size was three oysters and skimpy. This started the uneveness of the evening. I ordered a gin martini with Bombay Saphire which the waitress came back to say they did not have. I looked at their list and asked for Monkey 47. She came back with a half drink saying the bartender apologized that they were at the end of the bottle. No charge. So, I was looking at the list and the waitress said the bartender recommended Nordes. It tasted like hand soap to me. For seconds, I ordered the octopus which was excellent but unfortunately a bit salty to start so I could not enjoy the squid ink sauce as it made it even saltier. Very tender though and a good sized portion. The scallop dish on the other hand was one scallop. Again uneven sizes. They even had a burger as an option for a second. The third dish was a shared one. We chose the crab dish which itself was good. We liked the crab custard. It came with a paella dish studded with mussels which was too salty and fairly tasteless. Our server was new and kept reminding of this by asking us in too much detail what we thought of every dish. She was trying too hard to be nice to the point of being cloying and finally annoying. Also there should be a minimum acceptable dress code for servers. Hair and outfit - way too casual. OK for a diner... So, the bill was over $400 which had a 22% tip included. I personally don't care for restaurants that do this. At that price point, this place was a definite miss and we will not be back. There were some bright spots and I recommend they reformat as an ala carte restaurant and lose the pretensions.

We visited Bar Spero for a birthday dinner and were so pleased with the service and food! Bianca, our server, was so personable and knowledgeable about every item on the menu. We wanted to keep it light because we had more stops to make, but we enjoyed the grilled oysters (cheesy/buttery), foccacia bread (warm, housemade sea-salt with cheesy butter), tuna tostada (can't even describe this goodness), and the large potato over jamon and chicken skin bits. We were given a nice complimentary glass of champagne for the birthday and also enjoyed crisp wine from their selection. We'll definitely go back, it was wonderful!
