Burdell is centered on nostalgia, family recipes, thoughtful and sustainable sourcing, and the forgotten impact of Black farming, ranching, fishing, foraging, and culture on American cuisine and hospitality. Tomatina is designed to appeal to as many people as possible, which is why they carry a vegetarian, gluten-free and children's menu in addition to their regular ones.
