Our master butchers custom cut 28-day wet-aged steaks by hand for cooking in our 1800-degree broiler. Much of our beef comes from Midwestern farms in Michigan and Wisconsin as well as premium Wagyu beef brought in from the Mishima Reserve.

Red Rocks Café est un restaurant américain unique de propriété et de gestion locale. Le restaurant est en opération dans la région de Charlotte, Caroline du Nord depuis 1992. Deux entités sont en opération. Le Red Rocks original est dans la région de Charlotte Foxcroft au centre commercial Strawberry Hill, et la nouvelle entité ouverte en 2003 est au Birkdale Village à Huntersville, Caroline du Nord. Chef Ford Fry and Chef Kevin Maxey, together designed a “Mex-Tex” menu that plays to their own Texan roots, tracing the beginnings of the cuisine to the 1930s, when Mexican cooks first doctored up their dishes to suit a “Gringo” palate with Americanized elements, giving birth to the Tex-Mex dialogue. “Kevin and I wanted to do food we like to eat,” Fry said. “It’s natural for a chef to want to be true to a certain culture, and likewise, we wanted to do authentic Tex-Mex, because it developed where we’re from.
