Le Juvia propose un salon et restaurant intérieur/extérieur de 10 000 m² situé au niveau du penthouse du parking couvert d'Herzog & de Meuron, au 1111 Lincoln Road. Détenu et exploité par Jonas et Alexandra Millan de Bonito St Barth, le Juvia possède une salle à manger avec un jardin vertical, conçu par le botaniste mondialement reconnu Patrick Blanc, qui rappelle la luxuriance de la forêt amazonienne. Les chefs cuisiniers sont : Laurent Cantineaux, le poulain de Daniel Boulud, Sunny Oh, ancien employé de Nobu South Beach et le chef pâtissier Gregory Gourreau, qui a travaillé avec Alain Ducasse et François Payard. Le trio propose un mélange harmonieux des cuisines régionales de l'Asie, les saveurs vibrantes de l'Amérique du Sud et les techniques françaises classiques sous forme de ceviches, de tiraditos, de fruits de mer frais et de viandes de premier choix.
