Le restaurant Gertrude's, situé à l'intérieur du Baltimore Museum of Art (BMA), est l'endroit où John Shields met à l'honneur la cuisine de Chesapeake en utilisant des aliments locaux, dans un cadre chaleureux et élégant. Natif de Baltimore, le chef et propriétaire John Shields, auteur de livres de cuisine et invité d'émissions de cuisine, a nommé le restaurant en mémoire à sa grand-mère, Gertrude Cleary, qui lui a appris à cuisiner lorsqu'il était enfant. Le Gertrude's propose un menu régional sophistiqué avec des traditions et des aliments de Chesapeake Bay pour le dîner, le souper et le brunch, en utilisant des ingrédients bio et locaux dès que possible. The Ruxton will serve a mix of wet and dry aged prime cuts of Black Angus Beef, as well as dry aging Long Island Duck and Bison from Virginia’s New Frontier Farm in-house. To complement the steak options, seasonal shellfish and seafood entrees will be available including dover sole, Maryland rockfish, whole live lobster, king salmon, Chilean sea bass and more.The Ruxton will serve lunch every weekday and dinner 7 days a week.
