Ouvert en 1967, l'établissement à la gestion familiale Saloon propose une immersion dans le passé de la ville de Philadelphie. Mawn is a noodle house with “no rules,” and the first restaurant for Chef Phila Lorn and his wife Rachel, who bring with them close to 20 years of experience in Philly’s restaurant scene. Phila, pronounced “Pee La,” broken English for Philadelphia, is a first-generation Cambodian-American chef. The first in his family to be born here, his parents and siblings came to Philadelphia as refugees in 1985 after surviving the war in Cambodia.Mawn, which means “chicken” in Khmer, the Cambodian language, represents more than one thing. To Phila, chicken was at every meal growing up, and to his parents, chicken represented peacetime. During the war and genocide of the Cambodian people, there was mostly only what was found in nature to eat, including rice and salt. If there was chicken, it meant no war. At the end of that dark time, recipes were lost, and culture was wiped out, but through survival, a new authenticity was born.

We are ecstatic to open a state of the art open kitchen, serving the two dishes we recklessly love and cannot live without...noodles and sushi! Our goal is to focus heavily on freshness and quality, as we make craft noodles and sushi for our guests. That also means we will be making everything from scratch, in-house. Ouvert en 2009, le restaurant a fait renaître l'amour de la ville pour son patrimoine ethnique et a fait connaître à toute une génération de Philadelphiens les aliments de leurs ancêtres. En outre, Hager est aussi le propriétaire du Wursthaus Schmitz, dans l'historique Reading Terminal Market, une boutique de sandwichs et de charcuterie spécialisée dans les plats faits sur commande et les produits allemands vendus au poids. Afin d'accompagner au mieux les plats encensés du Brauhaus, Hager augmente sans cesse sa liste exceptionnelle de bières. Hager cultive des relations étroites avec des brasseurs rencontrés lors de ses voyages en Allemagne, et 29 de ses 30 bières sont originaires de ce pays. Pour beaucoup d'entre elles, il est sans doute le seul dans la ville, l'état ou même dans le pays à les servir. La plupart des 100 bières en bouteilles de sa liste proviennent également d'Allemagne.
