Leur premier restaurant a ouvert ses portes à Castlefield (Manchester) en 2004 avec un objectif clair : offrir une cuisine de qualité à des clients locaux et à un prix raisonnable dans un espace moderne, élégant avec un service convivial sans prétention. Le menu peut être qualifié de britannique avec quelques classiques supplémentaires en provenance d'Italie et du monde entier. Le nouvel espace, qui sera créé à partir de l'ancien pub et restaurant New Ellesmere sur la East Lancashire Road, permettra d'ouvrir un espace moderne élégant pouvant accueillir jusqu'à 180 personnes et comportera également une terrasse extérieure pouvant accueillir jusqu'à 60 convives.
