Jean-Georges cultive sa passion pour la cuisine de saison conçue selon le principe « de la ferme à la table », avec des ingrédients de la vallée de l'Hudson et de la Nouvelle-Angleterre. Construit en 1833, le bâtiment qui était d'abord une résidence a été converti plus tard en auberge. Il a été soigneusement rénové afin de préserver autant de matériaux d'origine que possible, y compris ses quatre cheminées encore fonctionnelles.
