La traçabilité est au centre des préoccupations culinaires du Chop House et sa cuisine n'utilise que le meilleur bœuf provenant de producteurs artisanaux de toute l'Écosse. La viande est dépecée sur place et vieillie à sec pendant 90 jours afin de lui ajouter de la saveur et d'augmenter sa tendreté. Le bœuf est par la suite cuit sur la flamme nue d'un gril à charbon, spécialement conçu pour donner une saveur subtile de fumée.
