Agua de Mar was born out of the need to explore and honour our culinary roots, focusing on pre-Hispanic Mexican cuisine and its evolution. We are a research kitchen committed to the preservation of endemic ingredients, working from the origin of the field and sustainable fishing.We deeply value local products, our producers and collaborators. We work according to the seasonality of the Yucatan Peninsula.We produce part of our ingredients in our garden and ranch, located in the outskirts of Merida, ensuring that our animals live in freedom, without stress and with a responsible diet. We also respect marine closures, promoting sustainable practices. In addition, our Wine Bar celebrates Mexican artisanal distillates and natural wines, including Artisanal and pet-nat options, contributing to the VINO VIVO culture.
