Tout est fait maison, y compris les pains frais et les pâtes. Certains plats sont des productions permanentes de leur cuisine - gnudi, pinci, papardelle et tagliatelles. D'autres sont plus de saison, tels que les fleurs de courgettes farcies en été, et les polpettas et soupes copieuses en hiver.
