We are an interactive culinary environment. At our restaurant we create and interpret the culinary ideas inspired from different cultures, products, and techniques. Our always evolving menu is a result of the interaction and interchange of different experiences. An open kitchen, eclectic and without limitations. Because cooking is our passion.Historically cooking evolved through the interaction and exchange of cultures. Through this premise and advances in technology our project, Cocina Abierta, was born, designed for the sharing and development for our passion.Cocina Abierta is a restaurant and school.
True to its name, the Chef’s Table feels gloriously indulgent, inviting lucky diners on a hedonistic journey encapsulating Antonio Pérez’s life in Puerto Rico and his culinary career across South America, Europe, and Asia. The setting feels intimate and wildly special, with just 12 seats surrounding the open kitchen, complemented by a lounge area for a welcome cava before dinner or a post-tasting menu digestif. The themed-driven five-course menu changes monthly along with its wine pairing. This is not merely another dining experience; it’s an intimate journey through the heart and soul of a Puerto Rican cook and his global culinary influences. Do not reserve a number of diners higher than desired, in our kitchen everything is prepared for all confirmed reservations, as such, we will regard it as a no show who has failed to comply with the reservation. If you wish to cancel your reservation, please give us at least three day’s notice. Thank you for your kindness and understanding.
Located on the fourth floor of the Hotel Puerto Valdés, in Puerta de Tierra, it has a view of the San Juan Bay and one of the most complete Argentine wine cellars locally. Its cuisine offers a wide variety of select cuts of meat, poultry and seafood that are roasted using the thousand-year-old concept of Kamado. But what is Kamado? It is an ancient art of cooking meat that allows its flavors and textures to be unique and of an exquisite flavor for the palate. As our executive chef Paxx Caraballo describes us “cooking meat in Kamado is an art. Carnes Steakhouse offers a relaxed atmosphere for dinner. On its terrace, the visitor will be able to observe the beautiful bay of San Juan, and when there are cruise ships, the view is much more interesting. To accompany the meats, the pairing is made with a delicious selection of Argentine wines in a cellar that includes an interesting variety.
