Executive Chef, Paul Hughes trained in the Savoy Hotel in London for 9 years as well as Roly’s Bistro in Dublin, two of the most respected hostelries in Europe. Roly’s in Dublin was voted Restaurant of the year for 2010, also voted Chef of the year.
