Le Charley's ne sert que du boeuf Angus reconnu de qualité USDA et provenant d'un animal ayant maximum 3 ans. La viande est vieillie de 4 à 6 semaines pour obtenir le plus de tendresse et de saveur possibles. Les steaks sont coupés le jour même à la main afin de toujours offrir la meilleure qualité. Ils sont ensuite grillés dans une âtre faite sur mesure à la flamme provenant de bois de chêne et d'agrumes de la Floride, à une chaleur de près de 650ºC.
