Our sourdough pizzas uphold the tradition of Neapolitan Pizza. Our bases are naturally leavened using Caputo flour, imported from Italy, and allowed to prove for 24-48 hours. We use D.O.P. San Marzano tomato for all red pizza bases. Our Fior Di Latte (fresh cows milk mozzarella), Buffalo mozzarella, Ricotta and Burrata cheeses are sourced from premium local manufacturers. Our selection of Salumi (cured meats) are from local producers unless otherwise specified. We hand-make our own pork sausages, preserved tomatoes and pickled vegetables.

Join us in our newest addition at Pittwater - Glasshouse Grill. Our bespoke kitchen has 2 natural coal grills. The signature cast iron grill and the Josper grill, which was imported from Spain where Josper has mastered the art of cooking with coal and wood. We exclusively use Ebony Black Angus across our menu which is produced from carefully selected prime quality Black Angus cattle. Along with our decadent menu of fine selections, we also have a range of starters that are perfect to share, fresh pastas, pizzas and a range of classic meals. We had a great experience here. The service was amazing and the staff member looking after us was attentive. We enjoyed the food too. Highly recommend for anyone to do the Bottomless Lunch.

The pizza and meatballs were lovely as usual but must congratulate the waitress for her exceptional service last Saturday night. We were up front and she went about her duties efficiently and with a smile on her face. Very busy with people just turning up and having that to deal with as well. She is definitely a keeper.
