ELEM is a new restaurant and cocktail lab on Main + 5th. Guests can expect to indulge in Top Chef Canada alum Mayekar’s bold cooking, featuring creative flavour-packed dishes that highlight the unique spices from cuisines around the world with local ingredients, alongside Winnie Sun’s inventive, element-inspired and sustainability-driven cocktails.ELEM’s food menu is an exploration of flavours and spices from all corners of the world, including Bangkok, California, Spain, Mexico, Italy, and Mumbai – all inspired by Mayekar’s extensive travels and Indian heritage. There will also be a big focus on local BC-grown ingredients. The 2,946 square foot, 76-seat space was designed by Vancouver-based Marko Simcich Architect and features three dining spaces and an open window into the kitchen to see the chefs at work.

Tojo a grandi après la guerre au Japon sous la splendide montagne volcanique nommé Sakurajima à Kagoshima, à la pointe sud du Japon. À son jeune âge, il a voyagé à Osaka où il devient apprenti dans le célèbre restaurant Ohnoya, qui est l'un des principaux ryotei du Japon, un restaurant de type très haut de gamme et très traditionnel. Pendant des années, Tojo a travaillé 16 heures par jour à Ohnoya, il a ainsi maîtrisé un répertoire encyclopédique de près de 2000 recettes traditionnelles japonaises qu'il peut faire resurgir de sa mémoire même aujourd'hui. Ici, il a également développé les disciplines de sélectionner les poissons et les produits les plus frais . Reconnaissant que sa passion pour la créativité le conduisait au-delà des frontières strictes de la cuisine au Japon, Tojo a choisi de venir en Amérique du Nord en 1971, où il a estimé qu'une population multiculturelle sans a priori serait plus réceptif à ses idées. Il a trouvé son public parfait à Vancouver.
