L'idée du Gracias Madre provient des visites des familles mexicaines des employés du restaurant. La mission est double : proposer une nourriture mexicaine biologique aux communautés à proximité et honorer ces mères mexicaines qui travaillent sans relâche dans leurs cuisines, souvent seules avec leurs enfants, pendant que leurs maris travaillent en Californie. Inspiré par quelques-unes des recettes de ces familles et de l'amour maternel, le Gracias Madre sert la cuisine de la chef Chandra Gilbert, faite à partir de produits biologiques provenant de fermes locales, pleine de saveurs et d'amour. Une sélection de cocktails à base d'agave du chef des boissons Jason Eisner agémente le menu.
