Die wesentliche Grundlage unserer Küche ist es, auf die klassische Menü-Folge Vorspeise-Zwischengang-Hauptgang-Dessert zu verzichten. Der Gast soll, ähnlich wie in den vielen sehr erfolgreichen spanischen Restaurants, jedes Gericht jederzeit bestellen können, also nach Lust und Laune nachbestellen, mit Freunden teilen oder einfach hintereinander weg als großes Menü essen. Dabei haben alle Gerichte die gleiche Größe und es wird keinen Hauptgang im dimensionierten Sinne geben. Die besten Grundprodukte stehen dabei im Vordergrund.

"Gaffel am Dom" est une brasserie typiquement rhénane : savoureuse, confortable et, comme c'est le cas pour les Rhénans, positive, joyeuse, avec beaucoup de soleil dans le cœur. En entrant dans la salle, la Gaffel am Dom se montre sous son meilleur jour. On y retrouve l'ambiance chaleureuse avec des espaces ouverts et animés ainsi que des coins confortables qui invitent à s'attarder harmonieusement. La carte propose principalement des plats régionaux et saisonniers. Outre la Kölsch la plus populaire de la gastronomie rhénane, on y sert également la Gaffel Wiess, douce et naturellement pure, à la pression.
