Primitivo is a tribute to the interaction of humans and nature.To honor this bond, we elaborate our menus by courses around complete animals and selected vegetables. By integrating everything, we've designed a variety of menus to enjoy under an old white oak of more than 300 years. We seek to offer a memorable experience where the quality of the ingredients of the region is the dominant characteristic.All techniques that we use are the reflection of the gastronomic culture applied in specific methods, slow cooked over fire and wood.
