A celebration of Sherry, Wine, Tapas, & Friends. Influenced by the culture of sip-a-little-bit-of-this-and-eat-a-little-bit-of-that, Tapavino began in August 2012 as Australia’s first Sherry Bar in Sydney, in a little lane-way not unlike something you would find in the cobblestoned alleyways of Spain. Osteria di Russo & Russo est détenu par le père et le fils Pino et Marc Russo, et supporté par une équipe dévouée «d'honorables italiens» dont quelques-uns qui ont travaillé ensemble autrefois au Bridge Room, à Sydney's CBD. Leurs plats sont classiques et combinés avec des saveurs italiennes. Toutefois, le Chef cuisinier Jason Saxby utilise rarement des ingrédients importés et est influencé davantage par les saisons et les techniques de cuisson modernes plutôt que par les recettes traditionnelles. Leur carte des vins vous suggère des classiques de Piedmont et de la Toscane, tout en mettant en vedette d'excellents choix provenant de Nebbiolo et Trebianno cultivés localement.
