Humphrey Folk, Jr., enfant de la région, développeur réputé et astucieux, traversait le pays dans le cadre de son travail, cultivant ainsi son goût sincère pour la nourriture et le bon vin.
Sans se laisser démonter par son manque total d'expérience de la restauration et de la cuisine, il a décidé de transformer une maison pittoresque et intime en un petit restaurant. Ses pairs ne lui manifestant que peu d'encouragements, il a alors ajouté le mot « folie » à son propre nom : c'est ainsi qu'est né le premier Prime Steak House de Memphis.
Avec une simple poignée de main pour signifier leur accord, Humphrey Folk a accueilli en 2003 le célèbre restaurateur de Memphis, Thomas Boggs, comme associé directeur du Folk's Folly.
