Ayant grandi dans la campagne piémontaise dans une famille qui élevait des poules, cultivait des légumes et fabriquait son propre salami, le chef Marzio Zacchi croit en l'importance de connaître la provenance des aliments que l'on consomme, et n'utilise que des produits frais de saison et d'origine locale.
