Le Café Degas doit son nom à l'impressionniste français du XIXe siècle, Hilaire Germain Edgar Degas, qui en 1872 a visité la Nouvelle-Orléans et y est resté pendant une courte période. Il a vécu au 2306 Esplanade Ave. L'artiste français et restaurateur, Jacques Soulas, est venu à la Nouvelle-Orléans en 1980, avec son ami Jerry Edgar pour construire un restaurant qui rendrait hommage à sa patrie, et où les convives pourraient vivre une expérience de bistro français (avec une touche de la Nouvelle-Orléans) et goûter des bons plats ainsi qu'une carte des vins inspirée. Ils ont choisi l'emplacement actuel en raison de son vieux charme historique, l'attrait artistique et pittoresque de la région, et parce que l'espace disponible était parfait pour l'effet qu'ils souhaitaient créer. Au fil des années, le Café Degas est devenu une référence grâce à la qualité de ses plats et de son service. Il s'emploi à améliorer constamment l'art de séduire les palais avec des plats du jour délicieusement préparés et une sélection de vins.
