Natif de Baltimore, le chef et propriétaire John Shields, auteur de livres de cuisine et invité d'émissions de cuisine, a nommé le restaurant en mémoire à sa grand-mère, Gertrude Cleary, qui lui a appris à cuisiner lorsqu'il était enfant. Le Gertrude's propose un menu régional sophistiqué avec des traditions et des aliments de Chesapeake Bay pour le dîner, le souper et le brunch, en utilisant des ingrédients bio et locaux dès que possible. L'intérieur du restaurant, inspiré par la vie sur la côte est de la baie de Chesapeake, est beau, élégant et confortable.
