Il s'est perfectionné avec une formation culinaire approfondie en Italie pour être à même de poursuivre la tradition de ses parents et proposer des repas italiens uniques et d'une imparable authenticité à Calgary. L'un de ses restaurants les plus reconnus est le Ristorante Pulcinella, où Domenic a remporté pour la première fois une distinction lorsque sa formation internationale a repassé les frontières pour revenir à Calgary au printemps 2006. À la tête d'une des rares pizzerias au monde certifiées APN (Associazione Pizzaioli Napolitani), Domenic a pu donner la pleine mesure de ses talents culinaires, de son impressionnante connaissance du vin et de sa passion pour la cuisine italienne. Much of our concept is based around the heirloom corn of Mexico. We import four types of corn from a collective of heirloom farms in Mexico in order to provide the best product we can. We process this corn from raw and turn it into masa for dishes all across our menu, like our Sope, Tamal, and of course, Tortillas. There is a saying in Mexico that we live by at Fonda Fora: "Sin maiz no hay pais," meaning without corn, there is no country. Maiz is the lifeblood of Mexican cuisine, and we are excited to present it to you as it should be.
