Restaurant owner Carlos Centurion’s newest Bulla (boo-ya) Gastrobar location in SouthPark at 4310 Sharon Rd., Suite W01. Bulla Gastrobar joins the Charlotte community with a contemporary spin on traditional Spanish tapas, an imaginative cocktail program, and an energetic atmosphere with extensive indoor and outdoor seating. Named after the Spanish slang term for “chatter,” Bulla Gastrobar offers a menu that boasts a mix of “alta cocina” and traditional approaches to tapas, featuring innovative techniques that are applied to classic recipes to yield modern yet authentic dishes.
Chef Ford Fry and Chef Kevin Maxey, together designed a “Mex-Tex” menu that plays to their own Texan roots, tracing the beginnings of the cuisine to the 1930s, when Mexican cooks first doctored up their dishes to suit a “Gringo” palate with Americanized elements, giving birth to the Tex-Mex dialogue. “Kevin and I wanted to do food we like to eat,” Fry said. “It’s natural for a chef to want to be true to a certain culture, and likewise, we wanted to do authentic Tex-Mex, because it developed where we’re from.
Using only the season’s best ingredients, our chefs create a variety of modern Italian dishes including pastas made from scratch daily, hand-tossed pizzas like the classic Margherita but make it Tie Dye, and savory lunch and dinner entrees like Pork Milanese, Tortelloni al Pomodoro, and Braised Short Rib Lumache that deliver flavors that go above and beyond the expected as well as a full-bodied wine and beer list accompanied by an array of handcrafted cocktails including a Sicilian Margarita and the Pomegranate Mule.
