His work took him all over the world from ships to hotels, and finally, Dallas, Texas , where he worked at the legendary Fairmont Hotel’s Pyramid Room, the Mansion On Turtle Creek, and the Crescent Court Hotel. In 1989, he and his wife Eliza, who hails from the Mediterranean region, opened Adelmo’s Ristorante to rave reviews. Their love of family, friends, good food and wines is reflected, to this day, at Adelmo’s. Meaning “roots” in Italian, Radici draws inspiration from Tiffany's early experiences in Italian restaurants, Tom's maternal heritage, and both Tiffany and Tom's travels through Italy.
