Inspiré par des recettes siciliennes authentiques à base de fruits de mer de la cuisine de la ville de Taormine, dans le sud de l'Italie, le chef Hiroyuki Mimura propose des plats de pâtes fraîches avec des fruits de mer et de viande de la meilleure qualité. Les pâtes d'inspiration sicilienne ne sont pas alourdies de sauce, mais enrobées dl'huile d'olive pure extra vierge. Vous savourerez des plats sains, à base de légumes frais, légèrement grillés, de poisson frais péché localement ou d'agneau assaisonné avec des herbes. La sélection quotidienne d'Antipasti Misti (avant le repas), allant de la simplicité à l'exotisme, comprend de la caponata de Palerme, du Prosciutto di San Daniele avec de la papaye produite dans la région, ainsi que du poulpe et des calmars marinées. Les plats comprennent des fettuccine à la carbonara fraîches, accompagnées de truffe râpée servie à table, de thon Ahi poêlé péché localement, de côtelettes d'agneau grillées « de Palerme » et de veau « à la sicilienne ». Le plat signature du Taormina est l'Uni Pasta (à la chair d'oursin), une spécialité apprécié au Japon et en Italie.
