    Michael, Matthew, and VJ took great care of us, offering suggestions for our menu selections which did not disappoint! The wine pairings for the chef’s tasting menu were not what I would typically choose, a wonderful Riesling Kabinett that was so smooth and sweet for a kabinett and a Portuguese golden white that was very light, showcasing a slightly mineral note which really helped highlight the flavor and texture of the Ahi. Both wines were spot on in complement to the Lump Blue Crab Cake and the Blackened Ahi Oscar. The crab in both dishes was generous; the crab cake was full of amazing crab meat, seasoned perfectly; the sushi grade Ahi was lightly seared rare and the accompanying balsamic reduction brought out the flavor of the ahi without hiding the star of the dish. My wife had the jambalaya which included five large shrimp. The dish was loaded with andouille sausage and seasoned well without too much heat. I had the chocolate and butter bread pudding which was more dense than I am used to in a bread pudding but smooth and flavorful, modestly portioned. We also shared the banana cream pie which was more dense than some but rich with cream and perfectly ripe bananas, not too sweet. I would give the nod to the banana pie over the bread pudding, narrowly, and it is definitely shareable. My wife also enjoyed the chef’s special andouille and potato creole soup and the smoked margarita with Hawaiian black salt rim, which did have a distinct flavor that did not overwhelm the cocktail. A meal to remember!

    We celebrated our anniversary and the service was spectacular. They recognized our anniversary with an appetizer and little desert cookie. Jambalaya and Chilean sea base were great! French press coffee with banana cream pie and pecan pie topped it off! Emeralds is a favorite when in Vegas

    A fantastic menu, excellent service right from the minute we sat down, food preparation was also excellent! Every time I dine here, my meal is exceptional. Highly recommended.

    Enjoyed our light dinner before the KA show. Wine by the glass was a little pricy but my fault for ordering a Merlot without looking at the wine list. Would go back. It was our anniversary and we were treated to a free dessert which we didn’t expect and that was a nice touch!!!! We ordered the octopus appetizer and the seafood boil and shared (two of us)!! Both excellent and we will certainly be back on our next trip!!!

    Great experience from the beginning to the amazing Banana Cream pie that wrapped up the evening. Fantastic service all around from the friendly staff, totally focused on ensuring everything about our visit was perfect…and I can’t imagine it could have been any better. Won’t hesitate on returning the next time we’re in Las Vegas.
