Comment proposer un classique incontournable dans un steakhouse américain et à la fois rompre avec les traditions pour créer quelque chose de totalement nouveau et passionnant ? C'est la question que le chef et restaurateur réputé Sam Marvin (créateur du très célèbre restaurant Bottega Louie de Los Angeles) s'est posée lorsqu'il a décidé qu'il était temps de réinventer ce qui a longtemps été le signe distinctif des steakhouses : une ambiance masculine, des pièces sombres, des serveurs chic, des grosses portions de bœuf et des tarifs exorbitants. La réponse à sa question, c'est l'Echo & Rig Butcher and Steakhouse qui vient d'ouvrir ses portes dans le charmant village de Tivoli, tout près de Summerlin Parkway, à 15 minutes du légendaire strip de Las Vegas.

The steaks (Filet & NY strip) were excellent- cooked & served at temperature, tender, seasoned. The sauces we tried only enhanced the steak. The fried mushroom strips, had a rich earthy flavor and the sauce just made them more delicious. The Mac & cheese was yummy- rich cheese flavor. The Caesar salad had a rich good dressing. Our server, Lucas, was very friendly & honest, and he guided our selections. Everything thing he suggested was delicious! Definitely plan your return. A good place to celebrate!

Excellent steak ! Friendly and welcoming staff . Great price , worth going off the main Las Vegas strip to try this restaurant . You won’t be disappointed .

First time visitor with this restaurant, we went here for our 24th wedding anniversary. The service we received was gracious, helpful, professional loved every minute, we were there. The food was just delicious, we had "cauliflower" very spicy, loved it, "shrimp" , "brussel sprout leaves", "Spencer steak", and for dessert, we had "sorbet". We dressed up a bit, however, it was a casual dress restaurant. A very nice evening for us.

We have been coming here for years usually about once a month. We love the brunch! We’re excited that they brought us a new menu and we love the fabulous selection! We always look forward to coming here on the weekends.,I always appreciate when we ask for a certain area to sit in they always accommodate us the best they can! We love all the servers! We had Beth the last few times and she’s great! Dan the Manager always comes to our table to say hi and wants to make sure everything is perfect for us! This place is a gold mine!

Everything perfect with the one exception of service being a little slower than I like towards the end of the meal. Great food and drink. Good value.

Nan is always great- love her customer warm service! Dan the Manager is always so welcoming and over the top sweet and hands on! We had the delcious crab cakes, oyster's and salmon....SUPERB! Will be back next week to bring my two boys!

The service team was very caring and attentive. I had a very enjoyable tartare and a zabuton steak very well prepared! We both spent a lovely evening!
