While Indian influence in Thailand began during the 3rd century B.C. with the arrival of Buddhism, the apex of culinary influence occurred starting in the late 13th century during the Sukhothai period. During that time the spice trade flourished and the Thai royal court hosted Indian expertise of multiple disciplines including the culinary arts. Our Thai curry dishes at Chakra are iterations on recipes that were developed during that time period hundreds of years ago.
