Le Charley's Steak House, établi en Floride depuis 1974, est la propriété de la famille Woodsby. Le Charley's ne sert que du boeuf Angus reconnu de qualité USDA et provenant d'un animal ayant maximum 3 ans. La viande est vieillie de 4 à 6 semaines pour obtenir le plus de tendresse et de saveur possibles. Les steaks sont coupés le jour même à la main afin de toujours offrir la meilleure qualité. Ils sont ensuite grillés dans une âtre faite sur mesure à la flamme provenant de bois de chêne et d'agrumes de la Floride, à une chaleur de près de 650ºC.
