The cuisine served at the restaurant is traditional "kaiseki" cuisine prepared by chef Daisuke Hayashi. He has been trained at "Kikunoi" and his proven cooking techniques have been appreciated by many customers. His cuisine is based on dashi and the flavors of the seasonal ingredients themselves.The interior had been made in Kyoto and shipped to London to be assembled by the craftsmen from Nakamura Sotoji Komuten, one of the world's leading experts in the Sukiya style.This project started with a desire to follow in the footsteps of our predecessors and to spread the still developing category of Japanese food culture, kaiseki, to the world.
At Taka Marylebone we like to keep things simple. We source the best produce we can find throughout the isles we call home. Then our chefs prepare them with love and care to enable the ingredients to speak for themselves. We are firm believers in the Japanese philosophy of shun. Which means that food should only be eaten when it is at its best and at the height of its season. This would be impossible without the skills and knowledge of our farmers, foragers, anglers, hunters and herders. The menu has been created to be shared by the whole table, with wine, sake or beer!
