The simplistic nature of the dining room and decor is done in homage to the hole-in-the-wall sushi restaurants in Japan that are tucked in alleys and in subway stations but serve world-class sushi. Sushi Mikasa has a rotating selection of sushi available depending on what fish Chef Kevin, formerly of Sushi Seki, is able to procure. Unlike other restaurants that blend sushi with other forms of Japanese cuisine, Sushi Mikasa sticks exclusively to sushi, nigiri, and sashimi for its menu. Some additional chef's signatures are the salmon sautéed tomato, kampachi, crunchy eel avocado, yellowtail jalapeño, medium toro, and sea bass skewers.
