Le concept du LA CAVA se définit selon les racines de son pionnier, Armando. Né et élevé à Florence, il a grandit en découvrant la nourriture locale des Osterias, sorte de petites tavernes, où tout était frais du jour, et préparé avec des ingrédients de base.
