Husband and wife owners, Massimo Schiavon & Antoinette Borromeo, provide an extension of their home to guests. A few of their signature dishes are Trofie Pesto Genovese, Rigatoni Bolognese and a Pasta on the Wheel. Other delights include a Tuscan Roasted Half Chicken, Grilled Whole Branzino, and a beautifully presented Pot of Mussels. Vegan, vegetarian and gluten free options are clearly marked on the menu. Villa Barolo Ristorante and Wine Bar features creative Italian-inspired dishes using the fresh seafood and game meats. It offers at least four different organic specialties a day. Try its pan seared foie gras with grilled Portobello mushrooms and Belgium endive, its pheasant breast that is lightly seasoned and pan roasted and served with roasted chipollini and mushrooms, or a combination of caribou and lamb chops marinated with fresh garlic and rosemary drizzled with a honey rosemary demi-glaze. Other organic game meats served are antelope, elk, ostrich, kangaroo and wild boar.
