Chef Stelian and Maria teamed up years ago when both discovered their passion for hospitality. For years they have been working together in several establishments and made them successful through their continuous dedication to customer service, and fresh food cooked from locally sourced supplies.Their passion is expressed through their commitment to delivering excellent customer service in a homely environment.Chef Stelian started out working alongside great Chefs including Gordon Ramsay. He developed his career over 15 years by delivering his passion on the plate. He`s furthered his development by doing an internship in France in one of the most highly reviewed restaurants once owned by Bernard Loiseau.Maria built her career as the Front House Manager working in collaboration with Chef Stelian to deliver excellent customer service by showing continuous care to the customers.Their aim is to deliver high standard food and service for the community suitably for everybody’s taste.

At The Bollo, everything is homemade and the menu is entirely governed by what"s in season. Our menu majors on hearty, warming dishes over the colder months; dry aged rib eye steak, warming stews & pies. We source our dishes from top-end suppliers.At The Bollo, what we cook is governed by what's available in season. There's nothing like eating fresh, home-made dishes in the Summer sun. We've got oodles of benches and awnings for when, inevitably, the English sun gets mercurial.
The Capability showcases rustic and seasonal dishes using ingredients lovingly grown in the hotel’s edible garden combined with locally sourced produce from the British Isles. Dishes include a traditional Waldorf Salad with an English twist; baby beets with Harbourne blue and horseradish; scallops with cauliflower; and spicy Cumbrian wild boar sausages. The finest old and new wines from around the world, as well as an English selection, have been carefully selected by the head sommelier. Guests can enjoy tastings in the Wine Room or dine at the chef’s table in the hotel greenhouse. In the summer, picnics can be ordered from the butler to enjoy in the parklands. In the tradition of the grand Waldorf=Astoria in New York City, The Terrace at The Capability will play host to London Syon Park Afternoon Tea.
