Le nom du restaurant est issu des mots Meridian, le nom traditionnel du quartier; de Keystone, soit le bâtiment historique dans lequel il se loge; et de Tangletown, le nouveau nom du quartier. La cuisine dirigée par Joe Ritchie propose une gastronomie américaine réfléchie et contemporaine et fait usage des produits du nord-ouest.
