The dinner menu reflects the unique spirit and sensibility of the Washington metropolitan area, with both the menu and design drawing inspiration from the surrounding Georgetown neighborhood.CUT restaurant features two stunning bars: one guests will find upon entering CUT, while the other sits atop the hotel on a magnificent deck overlooking the city. Both will serve custom bespoke cocktails, wine, beer, and an extensive food menu. An intimate 14-seat private dining space also will be available for special events, meetings, and celebrations. Because of the limited space in our dining room, any cancellations within 24 hours of the reservation may trigger a $25 per person cancellation fee. Guests may bring their own wine, as long as the wine is not on our wine list, limited to 2 bottles per table, and subject to a corkage fee of $45 per bottle / $90 per magnum.

Dauphine’s, a restaurant inspired by the playful spirit and iconic cuisine of New Orleans is led by Chef Kristen Essig, who called the city home for over two decades. The Dauphine’s menu pays homage to the diverse cultural influences and rich culinary traditions of New Orleans while utilizing Mid-Atlantic ingredients. The beverage program is developed in partnership with New Orleans native Neal Bodenheimer – owner of Cure, the 2018 James Beard Foundation Award winner for Outstanding Bar Program – and offers a menu of both classics and innovative riffs. The expansive indoor dining features a large sunken dining room anchored by a custom raw bar and wood charcuterie case, a wrought-iron pavilion linking the bar and dining, and an intimate mezzanine with private dining. Bookend by two outdoor spaces, Dauphine's features a 30 seat outdoor bar with a custom New Orleans-inspired tiled fountain and a separate covered dining patio for 80 guests.
