Riccardo a commencé sa carrière très jeune dans le prestigieux « GIRARROSTO », le restaurant familial à Milan. Puis, en 1982, il a déménagé aux États-Unis et a ouvert le célèbre Sonny Bono's à Los Angeles. En 1987, il a d'abord travaillé avec son cousin Roberto Ruggeri (gérant du Venture Bice) et ouvert avec lui le Bice New York, à Los Angeles, ainsi que de nombreux autres restaurants dans le monde entier. Aujourd'hui, après trois ans en tant que chef exécutif du Bice à Chicago, il a décidé, avec sa femme (et sous-chef), Veronica, et sa cousine (serveuse), Barbara, d'utiliser son art culinaire et sa créativité dans son restaurant baptisé à son nom : le « Riccardo Trattoria ».
