The season writes the menus and the freshness of the produce determines the plate at this modern-British restaurant at Careys manor Hotel in the New Forest. Head Chef Dylan James' dishes pay homage to the British countryside, and embrace the nature of the seasons. Expect locally sourced ingredients from Hampshire and Dorset's rich larder with dishes such as Grilled south coast cod loin, green lentils, chorizo, capers and Slow cooked dingly dell pork belly and cheek, apple and kohlrabi.
