Depuis plus de 20 ans, le Paolo's a apporté les saveurs italiennes dans le Kent. Paul Raftis fonda le restaurant après avoir appris à cuisiner aux côtés de sa mère, Darlene Raftis. Il aime la cuisine ouverte, qui lui permet de discuter avec vous pendant qu'il travaille. Il ne se lasse pas d'entendre « Ça sent si bon ici ! » « En tant que marathonien, il est la preuve vivante que vous pouvez manger italien et être en bonne santé. » En fait, l'un de ses plats signature, les « Fettucine Paolo », a été présenté dans le magazine Runner's World. « Il s'agit d'un des plats que j'ai créé.
