En 1977, John Gianaras a acheté le L&F Corner Market et l'a transformé en un restaurant décontracté nommé Panos (en hommage à son père.) Bond de 17 ans en avant... leurs filles Kristen et Kathryn ont repris les commandes. Désormais, le NOVY propose un menu simple et abordable et sert une cuisine californienne élaborée autant que possible avec des ingrédients frais, locaux et biologiques. Dans le but d'éviter tout déchet, il ne sert que des bières pression et du vin à la tireuse.
