Finaliste de la première saison de l'émission Top Chef, Connie DeSousa est la co-chef/propriétaire de ce nouveau restaurant situé dans le centre-ville de Calgary. Elle propose une cuisine urbaine rustique avec une rôtisserie-grill sur mesure, une trancheuse de style vintage ainsi qu'un bar de charcuterie artisanal. Cet espace accueillant et contemporain allie une cuisine sous la conduite du chef local aux notes de italiennes et françaises de pays. Les ingrédients proviennent de petits agriculteurs ainsi que d'éleveurs locaux, tandis que les aromates sont cueillis chaque jour dans le propre jardin du CHARCUT, réduisant ainsi le voyage des aliments.     I ate late on Sunday night of a long weekend so it was very quiet but the service team was excellent and the food was amazing. The charred octopus was the best I have had in Alberta and was uniquely prepared with giant white beans. The prime rib was cooked to perfection with the accompanying sauces each adding to the flavour of the meat. Many things on the menu I want to come back and try.

    Great lunch menu. Quick food delivery that’s fresh and hot. Daily specials are an unbelievable delectable deal!

    Food is phenomenal and good value. If you are corporate crowd lunch diner, be sure to ask for your bill when they bring your food. The last three visits we’ve sat for 15 minutes after having our plates cleared waiting for the server to return with our bill. Lunch All At Once is designed to be quick, and the excessive waiting for the bill defeats this purpose!

    The service here is sooo slow. At first I thought this was lunch hour rush but then I glanced over at the kitchen and there was consistently 2-3 servers standing there chatting while waiting for one plate to be handed over to them and then they would finish up that conversation and each carry one plate to be delivered to some table. There was no efficiency to be found. Had to wave our server down for a long time to just hear the daily specials. And took a long time to wave her down again for the bill (even though at that time the restaurant was mostly empty). Then she came by and asked if we were all doing ok but like the table was clear and we were just sitting there waiting for the bill, not like we were waiting to finish up.

    Very good food. Were seated in a busy corner when there were better seats available. Server was very friendly and informative; however visited the table a bit too frequently.

    I went with my work team to have a team bonding lunch. Overall, it was a great time. They sat us at a great table, there were many options of delicious food and drinks, and our server was very friendly. Would definitely recommend!

    We had been told great things about Charcut but overall thought it was not as hyped. Best part was the roasted vine tomatoes, steak was good, but accompaniments were adequate at best.
