Finaliste de la première saison de l'émission Top Chef, Connie DeSousa est la co-chef/propriétaire de ce nouveau restaurant situé dans le centre-ville de Calgary. Elle propose une cuisine urbaine rustique avec une rôtisserie-grill sur mesure, une trancheuse de style vintage ainsi qu'un bar de charcuterie artisanal. Cet espace accueillant et contemporain allie une cuisine sous la conduite du chef local aux notes de italiennes et françaises de pays. Les ingrédients proviennent de petits agriculteurs ainsi que d'éleveurs locaux, tandis que les aromates sont cueillis chaque jour dans le propre jardin du CHARCUT, réduisant ainsi le voyage des aliments. Par ailleurs, cet établissement qui est ouvert tard le soir sert un menu complet.

    The food was really good. We’ve eaten here before and the food and service has always been amazing but this time I’m not really sure what happened. Our server was very short with us, any questions or concerns were not responded to great. Even trying to order a drink felt like we were an inconvenience to her. She did her quality check/table touch barely even stayed at the table for us to respond and we didn’t see her again for the rest of the night. We were done our meals and waited over 20 minutes, eventually I had to ask the host for our bill. We usually don’t leave reviews like this but some of the steps of service left us feeling not so great after dinner.

    Very nice steakhouse with friendly attentive service. The bone marrow dishes were outstanding. I would come back again for sure.

    Our group had high hopes of this being an exceptional experience being fans of the chef and the restaurant location. The biggest impact to our rating was the service from our waiter and the confrontational/inconvenienced demeanour they exuded. The one highlight of services was the amazing bartender who joined in our jokes and had a laugh when we asked them to make a special drink and offered to take a group picture of us, greatly appreciated. The food was below expectation for the value. Flavour was lacklustre with the exception of one of the starters which was the roasted tomatoes and focaccia bread. We specifically went here for the gluten and dairy free menu options, but fair warning do not order the gluten free bread, bring a dry sponge from your kitchen. Collectively we all agreed we won’t be going back, and wouldn’t recommend to other friends and family to try it out. Would love to share a different experience but unfortunately this is what we had.

    Great food, great service, but too slow! Took 40 mins to get appetizers and over an hour to get the main courses. They are lunch time sandwich plates and shouldn't take this long.

    This was an incredible dining experience. We ordered cocktails, shared plates and entrees and everything that landed on our table was delicious. The menu is daring and diverse, service is excellent, and it’s a beautiful place to hang out and have a leisurely meal with friends.

    Excellent service, food quality was amazing. Only drawback was the portions are very small for the price. Good for a light dinner, not for a hungry crowd though.

    Our server was very unhelpful, dismissive and outright rude. I’m shocked by this as previous experiences have been good. Won’t return as there is the Uni District location.
